Lately we've been needing more quick snacks that are easy to grab-and-go, take to work, delicious (of course) and pack a nutrition punch. A couple tweeks to suit our family and we're ready to go!<br />

These are great for kids too! You can use Sunflower Seed butter instead of peanut butter and then they are suitable for lunches at school.<br />

I made a couple modifications, like leaving out the flax seed. Instead I used <span style="font-size: x-small;">1/4</span> cup chia seeds and <span style="font-size: x-small;">1/4</span> cup hemp hearts. To make them a bit healthier (this time) I swapped the chocolate chips for organic fruit juice sweetened Dried Cranberries. And now we have the <i>J</i> in PB& J!<br />
<br />
Chia Seeds are jam (ha!) packed with goodness! They are high in lots of vitamins and minerals such as Calcium, Iron, Magnesium and Potassium. They are also a great source of fiber, protein and Omega 3's. These are the main reasons I use chia way more than flax. As promised, here is a tutorial on how to do a super easy 5 minute pants patch!<br />

What prompted me to patch up my jeans, you might ask? Well, for one, I'm <strike>cheap</strike> thrifty. But more importantly, I <i>hate </i>shopping for pants. I find it incredibly difficult to find a pair that fits me just right, and are comfortable. And that are in my price range (can I say again, <strike>cheap</strike> thrifty?).<br />

I'm a curvy lady. I don't have <a href="http://en.wikipedia.org/wiki/Thigh_gap" target="_blank">thigh gap</a>.
For some insane reason, thigh gap is a physical attribute to strive for
these days. It's viewed as a very attractive physical attribute to
have. There is even a <a href="http://www.wikihow.com/Get-a-Thigh-Gap" target="_blank">Wikihow</a> page on how to <i>get</i>
thigh gap. Crazy I say! As a nutritionist, this kind of worries me. How
many young girls are going to starve themselves to try and get this!?
Now, if you are just a skinny person and this comes
naturally that is a totally different story, so please do not be
offended by this rant and be happy you don't have this problem.<br />

<i>Anyways</i>! Back on track here.<br />

For those who don't have thigh gap, you might be aware of how the inner thigh part of your pants wear down before the rest are ready to be retired. Your thighs rub together when you walk, this wears down your jeans. It never fails to be the first part of my pants to give out. So what's a girl to do with these otherwise perfectly good pair of pants!? Why, patch them up of course!<br />

<b>Step 1: </b>Find a nice scrap of fabric that covers the hole by about a 1/2" on each side. I used a scrap from my quilting fabric (100% cotton). <br />

<b>Step 2:</b> Turn your pants inside out, and roughly pin the fabric scrap ensuring that the hole is fully covered.<br />

<b>Step 3:</b> Stitch a 1/4" away from the edge of your fabric scrap all the way around, at least once. I decided to go around twice this time (and intentionally made it a bit messy...just the look I was going for).<br />

The top patch you can see is one I did at least 6 months ago. I only stitched around once, and it has held up well since. When doing this second patch, I restitched the 1st as I noticed a couple stitches thinning out.</div>

I had my Little Blue Birds to keep me cozy for the movie/sewing time too. I <i>love</i> this quilt. It was the second quilt I ever made (last spring - my first was for my soon to be born Nephew). 5 very ripe bananas, frozen then thawed<br />
2 large eggs<br />
<span style="font-size: xx-small;">1/2</span> cup softened coconut oil<br />
2 cups Gluten Free All purpose flour*<br />
<span style="font-size: xx-small;">1/2</span> cup Muscavado sugar (coconut sugar works nicely as well)<br />
1 tsp baking soda<br />
<span style="font-size: xx-small;">1/2</span> tsp Xanthan gum<br />
<br />
Optional add ins:<br />
1/2 cup Chocolate chips, walnuts, dried fruit, etc.<br />
<br />
*Preheat oven to 350°F. Lightly grease your muffin pan (or line with muffin cups...that's what I do)<br />
*Mix the bananas, eggs and coconut oil on medium speed in a stand mixer
until light and fluffy, about 1 or 2 minutes. This will help make the
bread rise nice and high. If you don't have a stand mixer, you can try
using a hand mixer!<br />
*Add in the flour, sugar, baking soda & xanthan gum. Mix on low
until all ingredients are combined. Scrape down sides if needed. Add any
additional ingredients (like chocolate chips or walnuts, yum!).<br />
*Fill each muffin cup about 3/4 full.<br />*Bake for about 30 minutes on the middle rack. Use a toothpick to test the
center. If some batter comes up with the
toothpick, bake for another 5 minutes and check again.<br />
*Transfer to a wire rack to let cool. <br />

And poor R2 is still looking pretty bare. Though with what i've been able to get done, you can see how amazing he's going to look once all that embroidery is done!<br />

What have I been so busy with then?? I'll let you guys in on a little secret. Ok a kinda big secret. I'm excited and happy to say that I've made the decision to not go back to work once my maternity leave is up. <i>Gasp</i>! Instead I will (finally) be starting a nutrition practice. Cause you know...I'm a Nutritionist! A Registered Holistic Nutritionist to be exact. I'm pretty excited to finally take that leap! Not only will this allow me to work from home to be with Fin (and save us <i>loads</i> of money on child care), but i'll be able to delve deaper into my love for nutrition and living a healthy lifestyle. And that's pretty awesome.<br />

Since I have 2 months to bring in a full-time income i've been hard at work, during Fin's naps that is. Website planning, networking, meetings, updating forms, planning & creating workshops... B U S Y! <br />

Delicious fluffy pancakes. They are hard to come by when gluten free. I've tried numerous recipes and store bough mixes. None of them ever make it close to gluten filled, dairy & sugar loaded light fluffy pancakes.<br />

Light and fluffy and simple. What else could you ask for? We love these...and they sure are an indulgence for our family. They satisfy that craving for fluffy pancakes. To ask for more (which I often do), i'd ask for them to have a nutrition kick. More fiber, or protein or something...so I won't feel bad about eating them cold as a snack (with yogurt, yumm!), or having them more often then just on weekends.That is in the works, so i'll keep you posted.<br />

<span style="font-size: small;">1 cup Almond milk (or other milk of your choosing)</span><br />
<span style="font-size: small;">1 extra large egg</span><br />
<span style="font-size: small;">2 Tbsp sunflower oil</span><br />
<span style="font-size: small;">2 <span style="font-size: x-small;">1/2</span> Tbsp maple syrup </span><br />
<br />1 cup gluten free all purpose flour<br />
2 tsp baking powder<br />
<span style="font-size: x-small;">1/4</span> tsp xanthan gum<br />
dash Himalayan sea salt<br />
<br />
*In a large bowl, whisk together the wet ingredients until lightly frothy.<br />
*Add the dry ingredients into the wet and whisk until no (of very few) lumps are left. Transfer mixture into large (4 cup) measuring cup for easy pouring.<br />
*Pre-heat a skillet or large frying pan. Add a tsp of coconut oil to heat and coat the pan/skillet. Pour batter to desired size pancakes (I can do 3 small pancakes at a time on my frying pan).<br />
*Flip once you see little bubbles on the surface and the edges look set (about 2 minutes) and cook for another 2 minutes or so. Pancakes should spring back when lightly touched.<br />
*Keep finished pancakes warm in a heated oven until ready to serve.<br />
*Makes about 12 small (3") pancakes.<br />

I never liked store bought granola's much for two reasons. For one, they are always <i>way</i>
too sweet! Second, too much oats with not enough hearty ingredients to

My favourite way to serve it has been to top with frozen raspberries or fresh cherries and a blend of almond and coconut milk. Recently though, I found an amazing Dairy free, <b>Soy free</b> yogurt!!! Seriously guys....I didn't quite realize just how much I really missed it until I had my first delicious spoonful of this yogurt.<br />

The brand is Yoso. They started with Soy based yogurts, but since soy turns my insides black (seriously...it's disturbing) and sends me to the bathroom for hours there is no way I'm going near it. But then walking by the yogurt section at my local grocery store reminiscing of the days I could enjoy this fermented treat, I spotted this wonderful stuff. It's the closest thing I've found to dairy yogurt. Creamy with just a bit of tang, and not all jello-like as other coconut milk yogurts tend to be. As an added bonus, it's actually a great source of calcium as well as being a probiotic!<br />

5 cups Gluten Free Rolled Oats<br />
1 cup raw cashews<br />
1 cup walnut halves, coarsely chopped<br />
1 cup raw almonds, coarsely chopped<br />
1 cup raw sunflower seeds<br />
1 cup raw pumpkin seeds<br />
1 cup coconut chips <br />
<span style="font-size: x-small;">1/3</span> cup hemp hearts<br />
<span style="font-size: x-small;">1/4</span> cup chia seeds<br />
1 cup maple syrup<br />
<br />
*Mix all dry ingredients together in a very large bowl. Add maple syrup and mix until everything is coated.<br />
*Spread over baking sheets lined with parchment paper. Don't over fill the sheets or the granola won't cook evenly. (I usually need three large trays).<br />
*Bake at 200<span class="st">°</span>F for 2 - 2.5 hours, or until lightly golden (easiest way to tell for me is the watch the coconut chips...when they're golden, the granola is usually done)<br />
*Let cool then store in an airtight container. (I use 1/2 gallon mason jars)<br />

**To shake things up, I sometimes add dried fruit once the granola is done baking and has cooled. Try adding 2/3 cup of a dried fruit of your choice if you like. Yummy options could be raisins, chopped dried apricots, cranberries, golden berries, blueberries, etc. You can also switch up the nuts for a change or if you just don't really like one of the ones listed above.<br />

These little mushrooms have to be my favourite fabric. Ever. It's just so cute! It's <a href="http://www.hawthornethreads.com/fabric/designer/tasha_noel/little_red_riding_hood/mushrooms_in_aqua" target="_blank">Mushrooms in aqua</a> from the Little Red Riding Hood Line by Riley Blake. I bought it a while back, so most places i've checked recently are sold out. You can still find pretty much the entire <a href="http://www.hawthornethreads.com/fabric/designer/tasha_noel/little_red_riding_hood" target="_blank">here</a> at <a href="http://www.hawthornethreads.com/" target="_blank">Hawthorne Threads</a>. They have an amazing selection of fabrics and the site is one of the easiest to navigate (compared to other online fabric stores)! I'm pretty sure i'll be buying more!<br />

And this awesome quilt pattern is the lucky winner for how those scraps will be put to cozy good use. Feathers by Alisson Glass can be found <a href="http://www.fabricworm.com/sepafequbyal.html" target="_blank">here</a>, or <a href="http://www.pinkchalkfabrics.com/index.php?main_page=product_info&cPath=39_75_964&products_id=15433" target="_blank">here</a>, as well as her new fabric line, Sun Print <a href="http://www.pinkchalkfabrics.com/index.php?main_page=index&cPath=37_47_863" target="_blank">here</a>, that I have been so tempting to snatch up (especially the <a href="http://www.pinkchalkfabrics.com/index.php?main_page=product_info&cPath=37_47_863&products_id=14675" target="_blank">feathers</a>). I love how the bright colours contrast with the grey, so my version will probably be similar in that way. This quilt pattern requires paper piecing, which i've never done before. I am looking forward to learning this new skill! It's supposed to be great for accuracy.<br />

The yellow chevron is so cute for the binding! I decided to quilt with a nice yellow <a href="http://www.connectingthreads.com/threads/Essential_Cotton_Quilting_Thread__L600902.html?startRow=25" target="_blank">thread</a> 1/4" from seams to bring out the chevron. Keeping the quilting nice and lose like this, in addition to the super soft minky back makes for one floppy baby quilt!<br />

These Kale chips are one of my favorite snacks that really pack a health punch!<br />

What kind of punch are we talking about? Well to start, Kale is packed with Vitamins K, A, and C, Iron, Calcium (per calorie, it has more calcium than milk), powerful antioxidants, fiber and sulfur (making it a great detox food too).<br />

I made it reversible to suit mood, outfit, and me vs. hubby. One side is a pretty aqua chevron, with the other a charcoal grey with white birds. I love that this will also work for carrying boys or girls (future baby maybe!?).<br />

We had our first test run at the Aviation Museum, and this is what I quickly discovered. Once Fin fell asleep his head was flopping back (as you can see below)! I'm glad the top of the body piece is padded since it was able to support his neck enough when it tipped back. (Don't worry I didn't leave him like that!)<br />

Luckily, I can make a pretty quick fix - a hood! I have a good amount of both fabrics leftover so I think i'll make a nice hood that I can snap on. Problem solved!<br />

1 Gallon purified water<br />
8 tea bags, organic green or black tea<br />
1 cup cane sugar<br />
1 cup previous batch kombucha<br />

*Bring water to a boil then remove from heat.<br />
*Add sugar and stir to dissolve. Let the water cool for about 5 minutes,
then add your tea bags, steep for 15 minutes and remove tea bags. Now cover the
pot and let it cool to room temperature (I usually do this before bed so it can
cool over night).<br />
*Once your sweet tea mixture has completely cooled add in your kombucha and
scoby. <i>Never use metal utensils when handling kombucha and especially your
scoby and it can damage the bacteria needed for your fermentation</i>.<br />
*Cover with cheese cloth making sure no bugs can get it (fruit flies are
your worst enemy!). Let ferment for 1-4 weeks.<br />
*Remove your mother scoby, a the new daughter scoby as well (if there is
one). Strain through cheese cloth if you wish to remove all the little 'wispy
bits' (I like to leave them since its beneficial bacteria, but Colin prefers it
strained).<br />
*Bottle your kimbucha for a second fermentation. This will make it nice and
fizzy! I like to bottle it in sterilized Grolsh flip top bottles. I love to add
chopped fresh ginger to half my bottles and let it ferment with the ginger.
Allow at least a few days to week for the second fermentation.<br />
*Drink as is, or diluted in water or juice. Enjoy! <br />

Kombucha! It's been ages since I've done a batch and my stock is just about empty. It's fermenting a little slow due to the colder weather, but it's making some good progress (especially since my scoby was a little old).<br />

One of my favorite treats that my mom made me when I was growing up was Banana Bread. It was always worth staying up late to wait for it to come out of the oven. All warm, moist and delicious with some butter spread over to melt into all the little pockets making it even <i>more</i> moist and delicious. I'm drooling just thinking about it!<br />

Once going gluten free, that banana bread was one of the things I missed the most. So I got the recipe from my mom and started experimenting with making it gluten free. And now, I've mastered it! It comes out super moist and fluffy every time!<br />

It's because of this bread that you will <i>always</i> find bananas in my freezer! I buy extra with my groceries and let them get all spotted, then pop them in the freezer. When it's time to make some banana bread, I put the bananas in a bowl to thaw. Usually over night is perfect, since I've found that having the bananas room temperature makes for better bread! Freezing the bananas, then thawing them also gives this recipe more liquid, so I'm not sure how the bread would turn out if fresh bananas were used. If you try, let me know how it works!<br />

Without further ado...<br />

<span style="font-size: large;"><u><b>Banana Bread</b></u></span><br />
<br />
5 very ripe bananas, frozen then thawed<br />
2 large eggs<br />
<span style="font-size: x-small;">1/2</span> cup softened coconut oil<br />
2 cups Gluten Free All purpose flour*<br />
<span style="font-size: x-small;">1/2</span> cup Muscavado sugar (coconut sugar works nicely as well)<br />
1 tsp baking soda<br />
<span style="font-size: x-small;">1/2</span> tsp Xanthan gum<br />
<br />
Optional add ins:<br />
1/2 cup Chocolate chips, walnuts, dried fruit, etc.<br />
<br />
*Preheat oven to 350°F. Lightly grease a 4 x 6.5 bread pan (or line it with parchment paper...that's what I do)<br />
*Mix the bananas, eggs and coconut oil on medium speed in a stand mixer until light and fluffy, about 1 or 2 minutes. This will help make the bread rise nice and high. If you don't have a stand mixer, you can try using a hand mixer!<br />
*Add in the flour, sugar, baking soda & xanthan gum. Mix on low until all ingredients are combined. Scrape down sides if needed. Add any additional ingredients (like chocolate chips or walnuts, yum!) now.<br />
*Pour batter into bread pan and 'slice' down the middle with a knife. This will make the bread rise evenly, though it doesn't look like it does much when its still just batter.<br />
*Bake for about an hour on the middle rack. Use a toothpick to test the center at the end of that hour. If some batter comes up with the toothpick, bake for another 5 -15 minutes.<br />
*Transfer to a wire rack to let cool. Slice and serve once loaf has mostly cooled (it may break apart easier when slicing if its too hot).<br />

This is my first chevron quilt and I'm really happy with how it's coming along so far. I have the binding all cut up, so hopefully tonight I can finish that tonight. It's going to be so lovely backed with some <a href="https://www.fabric.com/buy/al-645/minky-cuddle-dimple-dot-chocolate-brown" target="_blank">Dimple dot Minky</a> in a nice chocolate brown. Would it be too ambitious to try and get it basted tonight as well?<br />

We have a fairly small home. This means I don't have my own sewing space. It consists of a desk next to Fin's crib. Aaand then there is fabric and other crafting notions in various places around. One of those places is the cupboard attached to my wardrobe. </div>

I finally took the time to organize all my fabrics, which is a task I have a love/hate relationship with. I love organization, and I love to get reacquainted with all the pretties in there. I hate trying to get all the different cuts to stack up nicely. For some reason I have a difficult time with this, but I still managed to make it look neat and tidy!<br />

I love the Mustaches! The bottom shelf still looks kinda messy....but it is organized by project. So each stack is a work in progress (or two). The back left side is a double hourglass quilt, and the fabric for the Mei Tai baby carrier I want to make. Back right has 2 quilts in progress: Alphabet Soup & Tree of Life. That front right stack I'm pretty excited to finish up! It's an anniversary quilt for Colin. Yes, it is Star Wars. Our anniversary was in August....but I sadly wasn't able to finish it in time. It's taking a long time since there's applique and embroidery on it..and I'm slow with those because I'm a perfectionist.<br />
<br />
When it comes to sewing, it seems my eyes are bigger than my stomach. But make that saying apply to sewing....what would that be? ....Well I've thought long enough and can't think of a new saying, ha!<br />

1 <span style="font-size: x-small;">3/4</span> cup + 2 Tbsp Gluten Free all-purpose flour*<br />
1 <span style="font-size: x-small;">1/2</span> tsp baking powder<br />
<span style="font-size: x-small;">1/3</span> cup ground Chia Seeds <br />
1 tsp ground cinnamon<br />
<span style="font-size: x-small;">1/2</span> tsp baking soda<br />
<span style="font-size: x-small;">1/2</span> tsp xanthan gum <br />
<span style="font-size: x-small;">1/4 </span>tsp salt<br />
2 large eggs<br />
<span style="font-size: x-small;">1/2</span> cup pure maple syrup<br />
1 cup full fat coconut milk<br />
1 Tbsp lemon juice<br />
<span style="font-size: x-small;">1/4</span> cup canola oil<br />
<strike>2 tsp freshly grated orange zest </strike>(I would have added, but didn't have oranges)<br />
1 Tbsp orange juice<br />
1 tsp vanilla extract<br />
1 <span style="font-size: x-small;">1/2</span> cups frozen blueberries<br />
1 Tbsp sugar (optional)<br />

*Preheat oven to 400°F. Coat 12 muffin cups with coconut oil, or use muffin cups<br />
*In a medium bowl, mix together the coconut milk and lemon juice to make a "buttermilk". Set aside <br />
*In a large bowl, add flour, baking powder, chia seed, cinnamon, baking soda and salt;
whisk to blend, <br />
*In a small bowl. whisk together eggs and maple syrup until
smooth. Add buttermilk mixture, canola oil, orange zest, orange juice and vanilla;
whisk until blended.<br />
*Make a well in the dry ingredients and stir in the wet
ingredients with a rubber spatula just until moistened. *Fold in
blueberries. Scoop the batter into the prepared muffin cups. Sprinkle
the tops with sugar if desired.<br />
*Bake the muffins until the tops are golden brown and
spring back when touched lightly, 15 to 25 minutes. Let cool in the pan
for 5 minutes. Loosen edges and turn muffins out onto a wire rack to
cool slightly.<br />

As you can see, the minky is working against me with this project. I didn't pin it enough before sewing so it stretched as I sewed and now the corners curl up. <span style="font-family: "Trebuchet MS",sans-serif;">My sister asked me to make these sucks pads for the straps of her Ergo (a baby carrier). They are so close to done! All that's left is to stitch on the snaps on. I've made these for myself before, but this time I added the ribbon tabs for attaching toys or pacifiers (or just for baby play). I love how these turned out, and they're so easy to make! </span><span style="font-family: "Trebuchet MS",sans-serif;"><br /></span>

<span style="font-family: "Trebuchet MS",sans-serif;"> </span><span style="font-family: "Trebuchet MS",sans-serif;">I haven't thought of a clever name for this quilt yet, so lets call is the Pink & Green quilt. I started this quilt before Fin was born....so sometime in April or May! I made a lot of progress really quick, then started quilting it...and the bobbin ran out...and I never re-loaded it. How's that for lazy! But I'd really like to use this as a lap quilt during the cold winter months (this year), so I've gotta get crackin'! I'm using yellow thread for the back quilting, and coral/green quilting on the front. So far I've got most of the pink quilting done.</span><br />

first Christmas together 6 years ago. So naturally I continued the
tradition and made Fin his first Christmas stocking! </span><br />

<span style="font-family: "Trebuchet MS",sans-serif;">I'm mostly pleased with how it turned out, considering it was my first quilted stocking (the others are really basic and hand stitched). If I were to do it again I'll work harder to make the corners more rounded and make the cuff wider. The backing is a red velvet, the front various fabrics (off the top of my head Gnome for the Holidays and In From the Cold) and finished with a cuddly dimple dot minky in vanilla.</span><br />

I am now....26 years old (sad that I already am losing track and have to think about it!). I have a wonderfully supportive and loving husband, with whom I just started a family. We now have a 6.5 month old, cute as a button, son. I am a Registered Holistic Nutritionist (RHN), and passionate about all things health and nutrition. As I started to tell you already, I love to make things. Just about anything really. I love cooking, baking, fermenting, quilting, sewing, crafting, drawing, painting, etc, etc, etc. I love the outdoors and nature, hiking, snowboarding, biking... </span><br />
